4-Ingredient Corn Ribs (Ready in 25 Minutes)

I've eaten a lot of fresh Michigan sweet corn in my life, but corn ribs are a whole new way to serve it. Corn on the cob sliced into ribs, buttered, seasoned, and baked until the edges caramelize. Like real ribs, you eat these with your hands, get a little messy, and go back for seconds. My family's obsessed, and it's stayed one of my go-to "keep it under 7 ingredients" recipes right alongside charred corn and corn and basil soup.

(Yes, I know these went viral on TikTok. I'm not on there myself, but my corn-obsessed family didn't need an app to convince them.)

Ingredients

  • Sweet Corn: Ideally, you want to use fresh corn for this recipe.  Peak corn season is May-September depending on where you live in the U.S.
  • Seasoning: While the recipe calls just for salt, you can easily use a seasoned salt, the spice blend from my chili lime salmon or combination of smoked paprika, garlic powder and salt. This recipe is very versatile, so use whatever seasoning blends you like.
  • Butter: I like to use unsalted butter, but to make the recipe vegan, you can easily substitute for your favorite plant based butter or swap for mayonnaise or garlic butter for an added flavor boost.

💡 Fresh vs. frozen corn

I love this recipe with fresh corn in the summer, no contest. The flavor's better and it's peak season. But when corn isn't fresh (winter, early spring), Trader Joe's frozen corn ribs are a genuinely good hack, not just a shortcut. Season and bake them the exact same way.

How to cut the corn

I like to break each ear of corn in half so I'm making smaller riblets. You'll end up with 8 pieces of corn that will then each get cut into quarters.

  • Start by cutting off a little bit of each end of the ear of corn so you have two flat surfaces.  
  • Then pop on your cutting glove and carefully cut straight down through the core of the corn from top to bottom.
  • Lastly, cut each of those pieces in half straight through the core once again.  You should end up with 4 long spears of corn, each one the length of your original piece of corn.

A large, sharp knife makes this much easier, it'll get you through the tough cob in one clean cut.

Four spears is the sweet spot. I've tried cutting smaller, and the cob gets tough to cut through safely once the pieces get narrower. Four gives you a rib that's easy to cut, and perfectly sized for little hands.

Step by step instructions

Step 1

Preheat your oven to 400°F and line a baking sheet with foil. Cut the corn into ribs.

Rub the ribs all over with butter, then season generously with salt or your spice mix of choice, don't be shy.

Arrange on the baking sheet and bake 20-25 minutes, until curled and lightly browned.

Air fryer version

Season the same way, then air fry at 400°F for 10-12 minutes, flipping halfway through.

I default to the oven, mostly because I'm usually feeding my whole family plus whatever guests showed up. The air fryer's great, but it can't keep up with the batch size I actually need.

Flavor Variations

One of the greatest parts about these corn riblets is that once you've got the method down, you can easily change up the flavors. 

  • BBQ Spice Rub: use your favorite BBQ seasoning mix
  • Elote Style (think Mexican Street Corn): roll the buttered corn ribs in a chili lime seasoning and cotija cheese.
  • Garlic Butter: Use the garlic butter in place of regular butter.
  • Garlic Parmesan: Use garlic butter, then roll in Parmesan cheese.
  • Sweet and Spicy: With the same flavor profile as my sweet and spicy sweet potatoes, use the same seasoning and cook along side them for a easy cleanup.
  • Miso Butter Corn: Make a quick miso butter with your favorite miso paste and spread on the corn before baking. Garnish with chopped green onion.
  • Honey Butter: Use a honey butter to spread on the corn before baking, watching to make sure the honey doesn't burn.
  • Herbed Butter: Make a compound herb butter and then spread all over the corn riblets, garnish with the same herbs as in the butter.
  • Vegan: Simply swap out the butter.  You can either swap for a plant-based butter, mayonnaise or even coconut oil.

Storing leftovers

While corn ribs are best eaten right after cooking, you can store any leftovers wrapped in foil in the fridge.  When you are ready to reheat them, simply pop into a toaster oven for a few minutes to reheat.  

I also like to cut the corn kernels off the rib and store them in a small airtight container in the fridge.  Add these leftovers to salads, use as additional filling in black bean enchiladas or just snack on them anytime of day. They also make a great base for the street corn casserole we LOVE!

Ingredients
  

  • 4 pieces corn on the cob
  • 1 stick unsalted butter
  • 1 TB kosher salt
  • 1 TB seasoning of your choice optional

Instructions
 

  • Preheat your oven to 400 degrees F and line a baking sheet with aluminum foil. Then cut the corn into ribs.
  • Next, rub the corn ribs all over with butter and sprinkle with salt or the spice mix of your choosing.
  • Once fully seasoned, but them on the prepared baking sheet and bake for 20-25 minutes or until they are curled up and browned a bit.

Notes

Air Fryer Directions: Simply season them as if you were cooking them in the oven and then place them into your air fryer at 400 degrees for 10-12 minutes, turning over after about 5 minutes.
Storage Tips: Best fresh, but leftovers keep wrapped in foil in the fridge — reheat in a toaster oven for a few minutes. I also like cutting the kernels off the cob and storing them separately to toss into salads, stir into black bean enchiladas, or use as a base for street corn casserole.
Serving Suggestions: Great alongside spicy fish tacos or a mexican rice skillet, or really anything off the grill. If your seasoning leans Mexican, try a chipotle mayo dip; if it's more BBQ-style, a dash of hot sauce does the trick.
