Guys, I'm totally obsessed with using cake mixes and refrigerated doughs and turning them into delicious easy bakes that us busy moms (and dads) can totally handle. And these easy Cake Mix Funfetti Cookies are no exception.
I’ve got a kiddo who LOVES to bake, but isn’t quite ready for big baking projects on her own. She’s mastered the red velvet cake mix cookies and the strawberry cake mix cookies and asked me if there was anything more FUN for her to try. And it hit me, Funfetti cake mix would make super fun cookies!
She was totally on board and I got to delay a total mess in the kitchen for at least another week or so. These cookies are made with just 3 ingredients and no resting time. Grab your kids and your cookie scoop and let's get baking.
Ingredients
- Cake mix: Pillsbury Funfetti cake mix is the way to go, any flavor will work.
- Vegetable Oil: You can substitute butter or canola oil.
- Eggs: I always use large eggs when baking.
How to Make Cake Mix Funfetti Cookies
In a large mixing bowl, add the cake mix, eggs and oil. Stir the ingredients together, until you can’t see any more dry cake mix. You don’t want to overmix this cookie dough.
Using a cookie scoop to make sure all your cookies are the same size, scoop the cookie dough onto your prepared baking tray, leaving about 2” between dough balls.
Bake for 8-10 minutes until you see cracks on the top of the cookies, being careful not to overbake them.
Remove from the baking tray to a cooling rack and once cool, enjoy!
Serving Suggestions
- Birthday Party: These cookies would be perfect for a rainbow themed birthday party. For the littles, grab your food coloring and make a rainbow of pancakes, rainbow fruit skewers and rainbow layered Greek yogurt parfaits (dye the yogurt and layer with vanilla granola). Serve a Funfetti cookie cake with candles for the birthday kiddo to blow out.
- Holiday Cookie Swap: Funfetti cookies a little fun to any party. Dip part of the cookie into white melting chocolate and then sprinkle with gold luster dust, for a wintery take on the cookie. Bring these to the cookie swap along with my Grinch Cookies for the perfect mix of naughty and nice 🙂
- After school treat: These cake mix cookies can be made so quickly that you can mix the batter and pop them in the oven before you grab the kiddos from the bus. They will be ready to take out of the oven as soon as you walk in the door. Serve with vanilla smoothie for the perfect afternoon pick me up.
Funfetti Mix Flavors
Pillsbury does a great job of putting out different Funfetti cake mixes all year round. Be sure to grab a box 4-5 weeks before the holiday so you are prepared for themed baking! I typically grab two boxes and the matching Funfetti frosting.
Here are the holidays and flavor combos we love:
- Valentines Day: White cake with red candy hearts.
- Spring: Spring colored sprinkles (perfect for Easter, dye the batter Green for St. Patrick's Day).
- Halloween: Comes in both a vanilla and chocolate flavor Funfetti mix
- Holiday: A winter favorite with red and green sprinkles.
You can also find the Funfetti cake mix in yellow cake, chocolate cake, strawberry cake and gluten free varieties.
Decorating Ideas
While Funfetti cookies are delicious on their own, I have 3 easy ways to dress them up for a sweet table, holiday party or for a teacher appreciation cookie tray.
- Funfetti sandwich cookies: You’ll want to look for two cookies that are the same size. Then place a dollop of either vanilla buttercream or Funfetti frosting in the middle of one cookie and top with the other one, pressing down slightly to distribute the filling well.
- Halloween Cookies: Use the Halloween Funfetti cake mix and add two candy eyeballs to each cookie before baking.
- Mini Cookies: Use a mini cookie scoop or teaspoon measuring spoon to make mini cookies. Everything seems cuter when it’s tiny! The Funfetti mini cookies can get the sandwich cookie treatment as well.
Cake Mix Cookie Storage Tips
Store the baked cake mix cookies in a zip top bag or air tight container on the counter for up to 4 days. If you have decorated them or made sandwich cookies, I suggest using wax paper or parchment paper to separate the layers in your container.
Freezing Instructions: You can either freeze the cookie dough balls before baking, or bake the cookies as directed and freeze them already baked. They will last in the freezer for up to 2 months.
