Ingredients

1 15 oz Funfetti Cake Mix (Pillsbury is our preferred brand0
2 eggs
½ cup oil

Instructions

Preheat your oven to 350 degrees and line a baking tray with parchment paper.
In a large mixing bowl, add the cake mix, the eggs and the oil. Stir just until you can’t see any more dry cake mix, being careful not to overmix.
Using a cookie scoop, scoop the cookie dough onto your prepared baking tray, leaving about 2” between dough balls.
Bake for 8-10 minutes until you see cracks on the top of the cookies, being careful not to overbake them. Remove from the baking tray and let cool.

Notes

To make Funfetti sandwich cookies you’ll need 1 tub of vanilla frosting for the filling.

Freezing Instructions: You can either freeze the cookie dough balls before baking, or bake the cookies as directed and freeze them already baked. They will last in the freezer up to 2 months.
