7 Simple Muffin Recipes for Easy Make Ahead Breakfasts

I love a muffin, my kids love muffins and these 7 simple muffin recipes are the ones that I keep in heavy rotation around my house. They can all be made ahead of time and frozen for easy breakfasts and snacks when you need them.

1. Chai Spice Muffins

Perfect combination of fall flavors make this muffin a real winner! Add the glaze to make it more a dessert or leave them naked and enjoy as a great breakfast or snack choice.

2. All Bran Muffins

This classic recipe that has it's roots on the back of a cereal box is a top 5 favorite recipe on Simple Gray T-Shirt and a true family favorite in our house! It freezes really well and makes a great quick breakfast on busy mornings.

3. Blueberry Muffins

The quintessential breakfast muffin that can be dressed up and called dessert, or served simply alongside a cup of tea. This blueberry muffin recipe is quick and easy to make with kids and loved by even the most reluctant blueberry eater!

4. Apple Carrot Oatmeal Muffins

When you really want to go all in on the good stuff, turn to these yummy muffins. They are chock full of apples, carrots and oats. Not just good for breakfast, but a great addition to a simple lunch or perfect for an after school snack! Hidden veggies are an added bonus for even the pickiest eater.

5. Blender Muffins

This base recipe for blender muffins are a quick and easy go to when you feel like baking, but don't really feel like baking. You'll need a high speed blender (I love my Vitamix) or food processor and about 5 minutes until they are in the oven. These are great for baby led weaning, toddlers and their parents too!

These quick banana blender muffins just saved me!  That might be a bit of an exaggeration, but they certainly were easy to make and got breakfast in my big kiddo's mouth before she left for camp this morning!

6. Green Monster Muffins

Another version of my favorite blender muffins, but this time with some spinach added into the mix for a boost in nutrition and fun factor. These are great for Halloween, St. Patricks Day or just when you want to serve something super colorful.

7. Lemon Poppyseed Muffins

This is one of my favorites, so I guess I saved the best for last. The lemon loaf from Starbucks is an indulgent treat for me and I love the crunch of poppyseeds. This muffin is classic, but simple and a twist on my blueberry muffins! And it's made in one bowl for super easy clean up!
