Simple Pumpkin Pie Smoothie

Fall is all about pumpkin, and this pumpkin pie smoothie delivers on pumpkin flavor big time.  Use canned pumpkin pie mix to make this smoothie with just 5 ingredients and in about 5 minutes!  

As a busy mom of 3 kids with total sweet tooths, I like to try to come up with smoothie ideas that keep their palate happy, and keep the mom guilt at bay when I’m serving them breakfast.  This pumpkin smoothie along with my peanut butter chocolate smoothie and mango pineapple smoothie fit the bill perfectly!

I like to prep my pumpkin pie mix ahead of time by freezing it in ice cube trays so that I can just plop the pumpkin puree into the blender with the rest of the ingredients.  In just 5 minutes I can have breakfast made and be enjoying one of my favorite fall flavors.

Ingredients

  • Pumpkin puree vs. Pumpkin Pie Mix:  Pumpkin puree is simply pumpkin that has been cooked and pureed.  Pumpkin pie mix has added ingredients like spices and sugar.  I like to use a combination to cut back on the sugar from the pumpkin pie mix, but also avoid having to add spices and other sweeteners.
  • Milk:  You can use any milk you like in this recipe.  When I make a dairy free smoothie I typically use almond or coconut milk.
  • Greek Yogurt:  Again, you can sub any yogurt you like here.  Dairy free yogurt or any vanilla yogurt work well.  We always have Fage Greek yogurt in the house, so that’s what I use.

Blender Tip

I find that a high speed blender  (I use Vitamix almost exclusively) makes a smoothie that has the texture you are looking for.  Regular blenders might work the first few times that you use them, but I find they can’t hold up to frequent use and don’t blend the frozen ingredients nearly as well.

Simple step by step instructions

Add the oats, pumpkin puree and frozen bananas to the blender.  Then the Greek yogurt and milk.  Cover and start with the blender on low, and then as things start breaking down, turn it to high speed and let it run about one minute, until everything is well blended.

You are looking for a smooth, slightly thick consistency when you are done.  

Then pour into cups, glasses, or jars (whatever suits your fancy) and enjoy!  Or see notes below on freezing.

Vitamix tip:  Use the tamper!  It will help ensure that everything is really mixed together and perfectly smooth.

Freezing the Pumpkin Puree

I like to take a can of the Libby’s Pumpkin Pie Mix and combine it with a 15 oz can of pumpkin puree.  This combination gives me the right amount of sweetness and pumpkin pie flavor without having to add any additional ingredients to my smoothie.  Freeze this mixture in silicone ice cube trays or in these 2 Tablespoon Souper Cubes Trays.

Variations

  • Add spinach:  Add a handful of fresh or frozen spinach. The color will change from pumpkin orange, to a muddy brown, but the taste won't really change.
  • Add cauliflower: Frozen riced or regular cauliflower adds a little bit more good stuff and creaminess to your smoothie.  I always use it in my chocolate smoothies and often throw a few florets into these pumpkin ones as well.
  • Add nut butter: Mix in a tablespoon of almond butter for an extra power boost and added creaminess.

Make Ahead Tip

Much like I prep my pumpkin pie overnight oats, these smoothies are easy to make ahead of time. 

Make the smoothie then pour it into glass mason jars for freezing.  I like to use these pint size jars.  Then just pop them in the freezer.  When you are ready to serve, take off the metal lid and microwave for one minute. Give it a stir and then put one of these silicone lids on and enjoy.

Alternatively, make smoothie “packs” in zip top bags so all of your ingredients are in one place and you can just dump, add milk and yogurt and go.   

To do this, pop a few cubes of pumpkin puree, frozen yogurt cubes, the oats and a frozen banana into a zip top bag and lay flat in the freezer.  Make a bunch of these as part of your meal prep plan and you’ll have quick pumpkin smoothie ingredients ready to go whenever you need.
