    Simple Pina Colada Smoothie

    A pina colada smoothie can take your mornings from drab to fab.  A dreary morning can turn into memories of the beach with this healthy, simple smoothie with Greek yogurt that you can make in just minutes.

    Why this Pina Colada recipe works

    Smoothies are a breakfast staple here at Simple Gray T-Shirt.  My kiddos love a triple berry smoothie and I can sneak in some extra veggies when I make them this white smoothie in the winter.  

    This pina colada smoothie recipe is one that we can’t get enough of. This recipe works because you’ll blend it to a super smooth creamy consistency.  You'll  want to use a high speed blender to ensure that your ingredients are well blended.  I swear by my Vitamix, but any strong blender should do the trick.

    Simply starting with frozen fruit will ensure your smoothie is thick and creamy instead of watery, which happens if you add ice to make it frozen.  Frozen fruit also allows you to skip cutting fruit!  Keep your freezer stocked with frozen pineapple and frozen bananas to be whisked away to paradise with a pina colada smoothie at a moment's notice.

    A few notes on the ingredients:

    • Milk:  You can use any milk you like in this recipe.  If I need to make it a vegan smoothie, I simply substitute the dairy for coconut milk drink (the kind you find in carton)
    • Greek Yogurt:  I suggest plain or coconut flavored.  Again, if you are making this into a vegan smoothie, use coconut based yogurt as a substitution
    • Coconut Milk: I like to use the full fat variety that comes in a can.  Just be sure to shake well before using.

    How to make a Pina Colada Smoothie (simple step by step instructions)

    To make things even simpler, here are step-by-step photos to help you every step of the way.

    Before you get started, pull all of your ingredients out of the fridge and freezer and plug in your Vitamix other high speed blender.

    First, add the coconut flakes to the blender container.

    Then, add the frozen pineapple and frozen bananas to the container.

    Lastly, add the Greek yogurt and coconut milk.  Cover and start with the blender on low, and then as things start breaking down, turn it to high speed and let it run about one minute.

    Vitamix tip:  Use the tamper!  It will help ensure that everything is really mixed together and perfectly smooth.

    You are looking for a smooth, thick and creamy consistency when you are done.  

    Then pour into cups, glasses, or jars (whatever suits your fancy) and enjoy!

    Frequently Asked Questions 

    What kind of yogurt is good for smoothies?

    Anytime I’m making a smoothie recipe, I reach for the Greek Yogurt.  It has more protein that regular yogurt and it’s thicker consistency helps make this pina colada smoothie recipe extra creamy.  I like Fage 4% Greek Yogurt (with the green label), but you any type will work.

    How do you make a pina colada smoothie vegan?

    It’s actually quite simple.  You’ll simply substitute all the dairy ingredients for coconut based ones.  For the milk, sub coconut milk (the kind the comes in the carton) and for the greek yogurt, sub with a plain coconut based yogurt.  Two easy substitutions for a delicious vegan smoothie.

    How to store smoothies

    If you are making this pina colada smoothie recipe to drink for breakfast throughout the morning or on your way to work, you’ll want to get it into an insulated cup.  Make the smoothie and pour it into the cup immediately.  It will stay cold all morning long.  Use a smoothie straw to make drinking it super easy.

    However, one of the best parts of making a smoothie recipe is that you can make them ahead of time.  Simply make the recipe all the way through, and then pour into mason jars, leaving a little bit of room on top, and freeze.

    When you are ready to drink it, take it out of the freezer, take off the lid and microwave for one minute.  Give it a stir, put a lid on it and enjoy.  I like using these silicone lids right on top of the mason jar, but you can also transfer it to your insulated cup once it’s been thawed.

    One more simple tip

    If you want to make this smoothie a little bit more nutrient dense, try adding a handful or two of baby spinach leaves to it along with a handful of almonds. You’ll get the same pina colada flavor, but instead of a lovely pineapple colored smoothie, you’ll get a light green smoothie.  

    Be sure to put the almonds into the blender first, they need a chance to get completely blended into the smoothie.

    Equipment

    • Vitamix or other high speed blender

    Ingredients
      

    • 2 cups frozen pineapple chunks
    • 2 frozen banana
    • ¼ cup sweetened flaked coconut
    • ½ cup greek yogurt
    • ½ cup coconut milk
    • ½ cup milk

    Instructions
     

    • Place all the ingredients into the blender container, with the sweetened flaked coconut on the bottom.
    • Blend until you reach desired consistency.

    Notes

    Pina colada smoothies freeze great.  Simply pour the unused portion of smoothie into a glass jar (I like to use 8 oz mason jars) seal and freeze.
    When you are ready to drink them, either microwave for 45-60 seconds or leave on counter to thaw (about an hour).
