We love a good roll in our house.  Anything from a Parker House Rolls to Challah Rolls is a go around here.  One of my kiddos even requests Onion Rolls for breakfast. But as a busy mom of three, it’s not often that I’m making them from scratch.  These pull apart garlic bread rolls are the easy way to get semi-homemade garlic bread on your table with just four ingredients and very little hands on time.

I’m all about keeping a stocked pantry and freezer, and frozen bread dough is a staple. This recipe came about one night while I was making garlic butter pasta and thought, “what if the pasta was bread”.  Using my super popular garlic butter sauce was a no brainer, and then bazinga, this super easy garlic bread recipe was born!

The rolls are awesome as a side dish for Thanksgiving or just alongside a weeknight dinner of Pink Sauce Pasta or Pesto Salmon. These rolls take only about 10 minutes of hands-on time.  Defrost the dough through the day and be a superhero with fresh baked garlic bread on the table by dinner!

Ingredients

ingredients for garlic bread rolls
  • Frozen roll dough: I like using Rhodes Rolls frozen dough, but you can use what ever frozen dough you like.
  • Frozen Garlic Cubes: Find these in the freezer section near the frozen vegetables are most grocery stores as well as Target and Trader Joe's
  • Butter: I like to use salted butter, but you can easily substitute for unsalted and add additional flaky sea salt on top.

Step by Step Directions

Make the garlic butter. For a full tutorial, check out my garlic butter sauce recipe.

Roll each ball of dough in the melted garlic butter, then place in a 9x13 ceramic baking dish to defrost and rise.  You’ll use 20-24 balls of dough.  Cover with plastic wrap or a tea towel and let rise according to the package directions.

Once the rolls are perfectly risen, it’s time to bake.  Brush additional garlic butter on top of the rolls before putting them into the oven.

Bake as directed on the dough package. The rolls are done when they are golden brown on top cooked through in the center.  Take them out of the oven and brush one more layer of the garlic butter on top then sprinkle with Maldon salt (or another flaky salt that you like).

Variations

  • Dairy Free: Simply use a plant based butter.
  • Make it cheesy: Roll each dough ball in grated Parmesan cheese after you roll them in garlic butter.  Then sprinkle additional Parmesan or shredded mozzarella over the top while they bake.
  • Make it herby: Chop up any herbs you love and mix into the garlic butter.  Save some of of those same herbs to garnish with after the rolls come out of the oven before serving.
  • Change the pan: Use a bundt pan and make a garlicy monkey bread, or place the dough balls into to standard loaf pans for a pull apart garlic loaf.  The baking times will vary, but the recipe is the same.

Serving Suggestions

When the pull apart garlic rolls come out of the oven, you can garnish with chopped parsley or chopped garlic chives.

Serve them in either the baking dish or take them out and place them in a basket lined with parchment paper or a tea towel.  I happen to like letting people serve themselves, but either way is inviting.

  • For Thanksgiving we like to put everything on big platters and let people just go for it.  On the table with these rolls will be my soy vey green beans, sweet potato pie, sweet and spicy sweet potatoes,  this Asian Crunch Salad and the turkey.
  • The rest of the year, these rolls are a great side dish for comfort food.  They are great with homemade minestrone soup, creamy pesto pasta and instead of pita with a big Greek salad.

Storing and Using Leftovers

While these rolls are best served straight out of the oven, you can save any leftovers for a day or two.  To reheat them, I like to put them in a baking dish, brush a bit of additional garlic butter on top and bake for 5-7 minutes at 325℉ until they are soft and warm again.

You can also let these sit out for a few hours and make a bread stuffing or a savory bread pudding out of the “stale” rolls.

  • 24 balls Frozen roll dough
  • 8 TB Salted butter (1 stick)
  • 10 cubes Frozen crushed garlic
  • flaky salt

Instructions

  • Make the garlic butter by melting the butter and garlic cubes together in a small saucepan until they are totally incorporated. Set aside as you'll be using it in all of the next three steps.
  • Roll each ball of frozen dough in the melted garlic butter, then place the dough balls in a 9x13 ceramic baking dish to defrost and rise.  You’ll use 20-24 balls of dough.  Cover with plastic wrap or a tea towel and let rise according to the package directions. Save the remaining garlic butter.
  • Once the rolls are perfectly risen, it’s time to bake.  Brush additional garlic butter on top of the rolls before putting them into the oven.  Bake as directed on the dough package.
  • The rolls are done when they are golden brown on top cooked through in the center.  Take them out of the oven and brush one more layer of the garlic butter on top then sprinkle with maldon salt (or another flaky salt that you like).

Notes

Make Ahead: You can start making these the day before you want to bake them.  Follow the recipe as written until it’s time to rise the dough.  Pop the whole pan in the fridge and then bake as directed the next day.
Make them dairy-free - use dairy free bread dough and a plant based butter alternative.
Change the pan size - Make garlic monkey bread in a bundt pan or a garlic pull apart loaf in a standard loaf pan
