Matzo pizza is what Passover dreams are made of. It's the easiest recipe I know, and my kids would happily eat it every single day of the holiday. Lunch, snack, dinner, if we have the ingredients, this pizza is happening.
During Passover, when we're cooking constantly and eating out isn't an option, this is my default answer to "what can I eat?" Just three ingredients, totally customizable, and easy enough for kids to help make. And if you've got a few extra minutes and want to turn the same ingredients into something a little more involved, matzo lasagna is your answer.

TL;DR - Matzo Pizza
🍕 What it is: A 3-ingredient Passover "pizza" made with matzo, sauce, and cheese, ready in minutes.
⏱️ Time: 10 minutes start to finish.
🕎 Why it works for Passover: Uses pantry staples, is kosher for Passover, and keeps meals easy during a cooking-heavy week.
👧 Kid-friendly: Easy enough for kids to help assemble.
💡 No soggy bottom: Add a layer of cheese before the sauce to keep the matzo crisp.
🍽️ Make it a meal: Serve with honey roasted carrots, pesto salmon, and finish with Passover brownies for an easy weeknight win.

Key Ingredients

- Matzo: Manischewitz or Yehuda brand are the brands we typically rely on during Passover. Just be sure your box is marked Kosher for Passover.
- Pizza Sauce: We use Gefen Pizza Sauce. It's good, it's easy and it comes in a big jar.
- Shredded Cheese: I like using mozzarella and smoked mozzarella to keep things interesting.
Matzo Pizza Toppings and Variations
- Veggie Pizza: Add veggies like spinach, mushroom, black olives and green peppers to make a veggie lovers delight pie.
- BBQ Pizza: Skip the cheese and make a "meatzza" by using BBQ sauce, shredded chicken and grilled onions instead of traditional pizza toppings.
- White Pizza: Swap the classic pizza sauce for a white sauce and top with mozzarella and roasted garlic.
- Pesto Pizza: Make homemade pesto and use that as your sauce layer. Tear up chunks of fresh mozzarella and add leaves of basil and sliced tomatoes as your topping.
- Make Matzo Brei Pizza: Instead of just using one piece of matzo as the crust, go more "Chicago Style Pizza" and make the crust out of fried matzo. Make the fried matzo, but instead of breaking it up, leave it as one whole piece, flipping it once the bottom is cooked. Then top with sauce and cheese and any toppings you'd like before popping into the oven for a few minutes for the cheese to melt.
How to make the best matzo pizza
Preheat your oven to 350℉ and line a baking sheet with aluminum foil or parchment paper. Spray the foil with cooking spray if using that.

Step 1: Place two sheets of matzo on the baking tray and top with a little bit of shredded cheese. Pop it into the oven to melt for a minute, then take it out and build the rest of your pizza.

Step 2: Add the sauce, more cheese and any toppings you'd like.

Step 3: Then put the pizzas back into the oven until the cheese is melted and bubbly and just starting to get those golden brown spots. Remove from the oven, let cool for a few minutes so you don't burn the roof of your mouth and enjoy.
💡Pro Tip - Keep the matzo pizza crust crisp
The only problem with matzo pizza is that that sauce soaks in and can sometimes lead to the bottom falling apart when you pick it up. The solution to this problem is simple. Add a layer of cheese to the matzo BEFORE you add the sauce. It acts as a protective barrier and keeps the bottom matzo from getting soggy.

Recipe FAQs
Matzo pizza is best made fresh so the matzo stays crispy. You can prep toppings and shred cheese ahead of time to make assembly faster.
Add a thin layer of cheese directly onto the matzo before the sauce. This creates a barrier that keeps moisture from soaking into the matzo.
Yes. Skip the cheese and treat it like a matzo flatbread with sauce and toppings, or use a kosher-for-Passover dairy-free cheese if available.
