Matzo pizza is a quick, kid-friendly Passover meal made with just three ingredients. Crispy matzo, melty cheese, and your favorite toppings come together in minutes, making it perfect for lunch, dinner, or a quick snack.
Preheat your oven to 350℉ and line a baking sheet with aluminum foil. Spray the foil with cooking spray.
Place two sheets of matzo on the baking tray and top with a little bit of shredded cheese. Pop it into the oven to melt for a minute, then take it out and build the rest of your pizza.
Add the sauce, more cheese and any toppings you’d like. Then put the pizzas back into the oven until the cheese is melted and bubbly and just starting to get those golden brown spots.
Remove from the oven and let cool so you don’t burn the roof of your mouth and enjoy.
Notes
No Soggy Bottoms: Add a layer of cheese to the matzo BEFORE you add the sauce. It acts as a protective barrier and keeps the bottom matzo from getting soggy.
Matzo Pizza Topping and Variations
Veggie Pizza: Add veggies like spinach, mushroom, black olives and green peppers to make a veggie lovers delight pie.
BBQ Pizza: Skip the cheese and make a "meatzza" by using BBQ sauce, shredded chicken and grilled onions instead of traditional pizza toppings.
White Pizza: Swap the classic pizza sauce for a white sauce and top with mozzarella and roasted garlic.
Pesto Pizza: Make homemade pesto and use that as your sauce layer. Tear up chunks of fresh mozzarella and add leaves of basil and sliced tomatoes as your topping.
Make Matzo Brei Pizza: Instead of just using one piece of matzo as the crust, go more “Chicago Style Pizza” and make the crust out of fried matzo. Make the fried matzo, but instead of breaking it up, leave it as one whole piece, flipping it once the bottom is cooked. Then top with sauce and cheese and any toppings you’d like before popping into the oven for a few minutes for the cheese to melt.
