Place a slice of sourdough bread into the toaster and toast until just golden brown.
Carefully slice open your avocado, pop out the pit and put the flesh of the avocado into a small bowl. Use a fork to mash the avocado. Once you have gotten most of the chunks mashed out, add in the lemon juice, flaky sea salt and pepper.
Switch to a spoon and mash and stir until you have a super creamy avocado spread.
Spread a thick layer of the avocado spread on top of your toast, sprinkle with another pinch of flaky sea salt and enjoy!

You can make the avocado spread ahead of time to save even more time in the mornings. To store the avocado spread simply place a piece of plastic wrap directly onto the surface of the avocado puree in an airtight container. Press down to make sure you have gotten all of the air out. Then seal with the containers lid. This will keep the avocado mixture from turning brown. Store it in the fridge for up to 5 days.To safely remove an avocado pit, press with your thumbs on the skin side and gently push until the pit pops out. This is much safer than the way you see chefs on TV do it (whacking a knife against the pit until it grabs and then twisting). Alternatively, you can scoop it out with a spoon.
