Everything Bagel Seasoning Roasted Veggie Bowl

This roasted veggie bowl with a fried egg is one of my favorite ways to use the everything bagel seasoning and it’s a simple method to make a great healthy meal that's guaranteed to be on repeat in your kitchen!

Why this recipe works.

This recipe is amazing because it’s so simple.  Roasted vegetables take just a few minutes to prep, the crispy fried egg gets cooked right before you serve it, and the everything bagel seasoning brings everything together. 

Roasting the veggies with the everything seasoning and then using it again sprinkled over the egg at the end really makes the flavors pop. Yum!

Getting a perfectly crispy fried egg is really the only somewhat tough part of this recipe.  For my best tips and tricks to achieve this, check out my pasta pangrattato recipe.

How do you make a roasted vegetable bowl?

There are really three easy steps to making this recipe:

  1. Roast the veggies
  2. Fry an egg
  3. Put it all together

Let me go into a bit more detail for you 😀.

First you’ll want to line a baking sheet with parchment paper and preheat the oven to 425 degrees.  Clean and chop up the veggies into equal size pieces, about 1-2 inches a piece.

Start by putting the cut up sweet potato on to ⅓ of the prepared baking sheet.  Drizzle with olive oil and put in the oven for about 20 minutes.

Once the sweet potato has started to soften a bit, you’ll add the other two veggies to the same roasting pan. 

Drizzle the broccoli and cauliflower with olive oil and the everything bagel seasoning. Put back into the oven and roast until all the veggies are cooked and have started to crisp up to your liking. (I like mine crispy).

Once the veggies come out of the oven, it’s time to build the bowls and fry the egg.

I like to have all the veggies already in my bowl, so when the egg is done, it gets plopped right on top and poked so the yolk perfectly coats the veggies.

To fry the egg, put some olive oil in a pan over medium high heat.  Once the oil starts to shimmer, crack and egg in and stand back. The egg is going to sizzle and pop. Sprinkle some everything bagel seasoning over the top and let it cook without moving until the edges start getting lacy. When you peek underneath it should just be starting to get browned.  

Then, flip over, cook about another 30 seconds to a minute (depending on how runny or not runny you want the yolk).  Don’t overcook!

Using a spatula, lift carefully and put over the bowl of roasted vegetables.  Sprinkle some more everything but the bagel over the top and poke a hole in the yolk, stir it up and enjoy.

FAQ's

What roasted vegetables work best in this recipes?

Sweet potatoes, broccoli and cauliflower are a great combination of veggies, however, since this is really about learning a method rather than a recipe you have to follow to a tee, here are some other suggestions of vegetable combinations that work well with the everything bagel seasoning:

- Sweet potato, roasted kale, carrot
- Brussel sprouts, red onion, sweet potato
- Yellow squash, haricots verts, broccoli
- Butternut squash, cauliflower, purple potatoes
- Onions, peppers, broccoli

As you can see, the possibilities are endless.  I like to try to stick with veggies that have a variety of textures when roasted.  Some a little crunchy, some a little softer. Also, try to get a variety of flavors, including a veggie that roasts up really sweet with each combo.

What else does everything bagel seasoning go well with? 

Everything of course! I mean really, what doesn’t everything bagel seasoning go with?  I believe this spice is a pantry staple and can go on everything. Buy it at Trader Joes, on Amazon or make your own! Here are some of my favorite ways to use it:

- In the beginning it was a bagel flavoring, so in keeping with the bread theme, I like to use it as a topping on homemade challah.
- Sprinkle in your soft scrambled eggs for a great pop of flavor and texture
- Add to any salad for great flavor and a little crunch.
- Have you made poppyseed cookies?  Change it up and make them into savory crackers with everything bagel seasoning
- Add it to an egg salad for an extra special treat sandwich
- And probably the most popular use I’ve seen, sprinkle over your avocado toast with a squeeze of lemon or lime!  Perfection every time.

A few other tips:

  • This is a GREAT recipe to meal prep.  You can chop and roast all of the veggies over the weekend and then portion them out into containers to eat throughout the week.
  • It's no problem to fry up to two eggs at a time in a large skillet.  You want to make sure you leave enough for each egg to really cook well.
  • Remember to start the veggie that will take the longest to roast, about 15 minutes ahead of time. That way everything is done cooking at the same time. 
  • Want to make your own everything bagel spice? Have at it. The blend is typically poppy seeds, sesame seeds, sea salt, granulated onion, granulated garlic.

Everything Bagel Seasoning Veggie Bowl w/ Fried Egg

Ingredients
  

  • 1 lb broccoli chopped or one small head
  • 1 lb cauliflower chopped or one small head
  • 1 large sweet potato chopped
  • 1 tablespoon of olive oil
  • 1 tablespoon or more everything bagel seasoning
  • 3 eggs
  • a few glugs more of olive oil for frying the eggs

Instructions
 

  • Roast the Veggies
  • Preheat the oven to 425 degrees.  Line a baking sheet with parchment paper.
  • Wash and chop the sweet potato, then put it onto the prepared baking sheet.  Drizzle it with about ⅓ tablespoon of olive oil and put in the oven.  Set timer for 15 minutes.
  • Wash and chop the broccoli and cauliflower. When timer goes off, add the broccoli and cauliflower to the baking pan with the sweet potato.  Drizzle with olive oil (about ⅔ tablespoon) and 1 tablespoon of everything bagel seasoning (or as much as you like) and carefully toss to coat.
  • Return the baking pan to the oven and continue roasting until done to your liking (another 20 minutes or so).
  • When veggies are done and to the crispiness you like, remove from oven, toss together and divide into bowls.
  • Fry the Egg and Assemble
  • Into a frying pan over medium high heat, put in a few glugs of olive oil (enough to just cover the bottom of the pan is what I like to do).
  • Once hot (the oil should look a bit wrinkly or wavy), carefully crack your eggs into the pan.  They will hiss and crackle when you do this.
  • Sprinkle everything bagel seasoning on each egg.  Let cook until the edges are crispy, then flip, 
  • Let cook an additional 30-60 seconds on the second side, then carefully remove from pan with a spatula and put on top of roasted veggies. 
  • Sprinkle additional everything bagel seasoning over the top if desired, poke hold in the fried egg and enjoy!

Notes

The quantities of vegetables in this recipe are a just a guideline, as this recipe is more about learning a method, than the specific recipe. 
You can always roast more vegetables, different vegetables, or other combinations, based on your likes and needs.
