cherry blender muffins

easy blender muffin recipe using frozen or fresh cherries to provide a pop of color and surprise in the middle!

  • 2 cups old fashioned oats
  • 2 eggs
  • 2 ripe bananas
  • ½ cup greek yogurt
  • ¼ cup brown sugar
  • 1 teaspoon vanilla
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup cherries fresh or frozen + 12 more cherries to pop into the middle of each muffin


  • preheat the oven to 350 degrees and spray a muffin tin with baking spray
  • put all the ingredients except for 12 cherries into the blender
  • blend together until all ingredients are well incorporated and the oats are broken down a bit (1-2 minutes) - the batter will be on the thin side
  • pour the batter into the prepared muffin tin
  • plop a cherry into the middle of each muffin and push down just a bit
  • bake at 350 degrees for 18-20 minutes
  • once done, let cool about 5 minutes in the pan, then move to a cooling rack to cool completely


these freeze really well.  Store in an airtight container in the freezer for up to 3 month.  When you are ready to eat, leave out to defrost for 30 minutes, or microwave for 15-30 seconds.
these are a funny color, brown on the outside, purplish on the inside...don't be alarmed :)
these muffins will be beautifully domed when they come out of the oven, but will likely fall in a few minutes.  this is totally normal.
