Looking for a tropical twist to brighten up your mornings? Meet our Mango Overnight Oats! This breakfast is a game-changer, packed with juicy mangoes and creamy oats that’ll make you feel like you’re on a mini vacation right in your kitchen. With just a few minutes of prep the night before, you can have a refreshing breakfast ready to go. Simply mix oats, coconut milk, yogurt, and fresh or frozen mango chunks, and pop it in the fridge overnight.
Put oats into a clean 8 oz wide mouth mason jar. Top with the Greek yogurt and then pour in the milk.
Add the mango puree or frozen mango cube into the oats.
Cover and seal jar and put in fridge for at least 12 hours or up to one week.
When you are ready to eat the overnight oats, give them a good stir to make sure all ingredients are well incorporated. If desired, top with additional fresh mango or other toppings of your choosing.
Notes
If you like your oats a little bit creamier, add a bit more liquid. If you like them to have a bit of a bite, add a bit less.
You can easily make multiple jars of mango oatmeal at a time. Simply double, triple or quadruple the recipe as needed.
To make the recipe gluten free: Most old fashioned oats are naturally gluten free, but be sure to double check that the ingredients are certified gluten free if you have a gluten allergy.
To make the recipe dairy free: Simply substitute the Greek yogurt for a coconut based dairy free yogurt
