These Hanukkah Cake Mix Cookies are an easy, festive treat made with just 4 simple ingredients. Topped with chocolate gelt and perfect for decorating with the kids, they’re a quick holiday dessert that’s fun for the whole family.
In a large mixing bowl, add the cake mix, the eggs and the oil.
Stir just until you can’t see any more dry cake mix. You don’t want to overmix.
Using a cookie scoop, scoop the cookie dough onto your prepared baking tray, leaving about 2” between dough balls.
Bake for 8-10 minutes until you see cracks on the top of the cookies, being careful not to overbake them. When they come out of the oven, add one piece of gelt to the top of each cookie and press down a bit. Let cool completely and enjoy!

Cooling Time: If you are going decorate the tops, be sure they are completely cool before starting. Make Hanukkah sandwich cookies: To make these into sandwich cookies you’ll need about 2 cups of frosting. Put gelt on only half the cookies and then once cooled, sandwich two cookies that are about the same size together, with the chocolate gelt on the top cookie.Freezing Instructions: Bake the cookies as directed and freeze them already baked. They will last in the freezer up to 2 months when stored in an airtight container.
