20-Minute Cake Mix Chocolate Chip Cookies

These cake mix chocolate chip cookies are soft, chewy, and ready in under 30 minutes with just 6 ingredients. No mixer, no chill time, just a box of cake mix, chocolate chips, and a craving for something sweet. Perfect for a quick treat or an easy dessert win.

Ingredients

1 box Yellow Cake Mix
2 Eggs
½ cup Unsalted Butter
2 TB Brown Sugar
1 TB Vanilla
1 cup Semisweet chocolate chips

Instructions

Preheat the oven to 350℉ and line a baking sheet with parchment paper.
In a large mixing bowl, add the cake mix, butter, eggs, vanilla and brown sugar and stir until just combined. Then add in the chocolate chips and mix until the batter comes together and you see no more dry ingredients.
Using a cookie scoop to make sure all your cookies are the same size, scoop the cookie dough onto your prepared baking tray, leaving about 2” between dough balls.
Bake at 350℉ for 8-10 minutes until you see cracks on the top of the cookies, being careful not to overbake them. Let sit on the baking sheet for about 5 minutes, then remove from the baking tray and let cool.

Notes

Cooling Time: If you are going to fill them to make sandwich cookies or decorate the tops, be sure they are completely cool before starting.

Make chocolate chip ice cream sandwiches: To make these into ice cream sandwiches you’ll need 1 pint of vanilla ice cream and some mini chocolate chips for the outside.

Freezing Instructions: Bake the cookies as directed and freeze them already baked. They will last in the freezer up to 2 months when stored in an airtight container.
