Simple Vegetarian Enchiladas

These simple enchiladas are vegetarian, easy to make and a great twist on a classic dish.

Plantains | Brown Sugar Cinnamon | Black Beans Cumin | Garlic Powder Onion Powder Tortillas Enchilada Sauce Goat Cheese


Put the drained black beans in a large bowl. Add in the seasonings and mash together.

Step 1

Assemble the enchiladas by layering tortillas, black beans, feta cheese and fried plantains.

Step 2

Pour 1/2 of the enchilada sauce in an 8x8 pan. Then add the rolled enchiladas and top with the rest of the sauce.

Step 3

Cover the sheet with aluminum foil and bake in the oven. Once done, remove from the oven, allow to cool and enjoy!

Step 4

You can easily substitute roasted sweet potatoes for the plantains in this recipe.  Just roast with a little brown sugar, cinnamon, olive oil and salt and once cooled, add to enchilada in place of the plantain.
