Puff Pastry  Potato Boureka

Quick & easy side dish for any occasion!

Potato bourekas (aka boreks) are a true Israeli treat with delicious pastry surrounding a delicious potato filling. Other than defrosting time for the puff pastry, this recipe can be assembled in about 10 minutes, with under 5 ingredients

frozen puff pastry dough mashed potato egg optional additions: caramelized onion everything bagel seasoning shredded cheese

Ingredients

Unfold the defrosted puff pastry and pile the mashed potatoes up in the middle section.

Step 1

Then fold the top 1/3 up over the filling. Fold the top portion over the rest of the puff pastry forming a flattened log shape.

Step 2

Press down to seal the edges and brush with an egg wash.

Step 3

Sprinkle the top with any toppings you'd like (sesame seeds, everything bagel seasoning or just leave plain) and bake in a 425 degree oven until golden brown.

Step 4

These puff pastry bourekas freeze really well.  You can make a few ahead of time and defrost one the counter, popping them into the oven for a few minutes to reheat right before serving them.
