The best part of this banana bread, other than it tastes delicious, is that it is made in just one bowl with a whisk and a fork. This means easy clean-up, and less time following a million steps. It also is a great recipe for new bakers, because this chocolate chip banana bread is so simple, taking just 5 minutes to mix together.
There are also two special ingredients that really set it apart from all other one bowl banana breads....cake spice and chocolate chips. It's a little something special that you won't notice is missing, but will leaving you wondering why this banana bread is better than others you've baked!
It is also totally adaptable. You like nuts, throw some in. You want a crinkly crust, sprinkle with cinnamon and sugar. Feeling like you want more chocolate than banana, add in extra chocolate chips. This recipe comes out great every time!
Ingredients
A few notes on the ingredients:
- Sugar: I like to use a mix of white sugar and brown sugar, but if you only have one on hand, you can easily make it with either white or brown.
- Bananas: They should have brown spots on them at the very least. You want to make sure they are really ripe so that their sweetness and flavor really shine.
- Chocolate chips: I like to use regular chocolate chips, but chocolate chunks or mini chip chocolate chips would work well too.
- Cake Spice: Cake spice can be found in specialty spice stores and sometimes in the regular grocery store. It’s typically a combination of cinnamon, star anise, nutmeg, allspice, ginger and cloves, blended into a warm spice. If you can't find any, you can make your own blend or just use cinnamon in it's place.
Simple step by step instructions
First, you'll want to preheat the oven and line your loaf pan with parchment paper. If you don't have parchment paper, spray the loaf pan with a non-stick baking spray.
Then, add all the dry ingredients to a bowl. Mash the bananas and add those into the bowl as well.
Pour in your liquid ingredients and using a mixing spoon or spatula, mix until everything is combined. Alternatively, use a hand mixer, but know that you will loose the chunks of banana in the baked loaf.
Then, add the chocolate chips and pour into your prepared loaf pan. If you forget, like I sometimes do, you can also stir them in one the banana bread batter is in the pan 😉.

If you are storing the banana bread short term, wrap it well in plastic wrap and leave on the counter for 3-4 days. It will likely be gone before then.
If you want to make this ahead of time and freeze it you can do one of two things. Once the banana bread has cooled, wrap the entire loaf in plastic wrap and pop into a zip top bag. Then put it in the freezer.
Alternatively, cool and slice the banana bread. Wrap the individual pieces of banana bread and then pop them into an air tight container. Then you can take out one slice to enjoy at a time.
In order to achieve a crispy-ish crinkly top, sprinkle the top banana bread batter with a mix of cinnamon and turbinado sugar before you put it in the oven.
Side note: You can buy turbinado sugar at Trader Joe's, it's the least expensive I've found. However, if they don't have it or you don't want to keep that much on hand, these raw sugar packets work the same way.

Simple One Bowl Banana Bread
Equipment
- Large Mixing Bowl
- 9x5 Loaf Pan
- Wire Whisk
Ingredients
- 1 ½ cup flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup white sugar
- ½ cup brown sugar
- 1 tablespoon cake spice or cinnamon cake spice, combo of ¾ TB cinnamon, ¼ TB nutmeg, or whatever pleases your palate
- 2 eggs beaten
- ¼ cup butter melted
- 3 bananas mashed
- ¾ cup chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Generously spray a 9x5 loaf pan with baking spray.
- In mixing bowl, whisk together flour, baking soda, salt, sugar, and cake spice.
- To the dry ingredients, mix in eggs, melted butter, and mashed bananas.
- Stir in the chocolate chips and pour batter into the pan.
- Bake at 350 degrees for 1 hour or until a toothpick comes out clean (check after 45 minutes and cover with foil if top is getting too dark)
