preheat oven to 425 degrees and prepare a baking sheet with parchment paper
cut the head of cauliflower into small florets
take out the core
slice big pieces off the middle stem
break the big pieces of cauliflower into small florets
spread the florets on the baking sheet or places into a mixing bowl (either method will work)
drizzle olive oil and spices over the top
mix well and rub spices into the cauliflower with your hands
spread out evenly on prepared baking sheet
roast at 425 for 25-35 minutes or until browned the way you like it

Notes
make sure not to crowd the pan. you really want the cauliflower to roast, not steamyou may need a little more of the olive oil and spices depending on how big the cauliflower is that you buy. it's okay to add another tablespoon of each or as much as you think is needed to coat the vegetable well.
