Simple Sweet Potato Pie

This simple sweet potato pie makes a great side dish for Thanksgiving, Passover or any day of the week!

Sweet Potatoes Sugar | Vanilla Almond Milk Eggs | Brown Sugar Flour | Pecans Butter

Ingredients

In a large mixing bowl, combine drained sweet potatoes, sugar, almond milk, vanilla, and eggs . Pour smooth filling mixture into the prepared springform pan.

Step 1

In a small bowl, combine brown sugar, flour, pecans and butter. Once combined, spread evenly on top of sweet potato mixture.

Step 2

Bake at 400 for 35-40 minutes, until the middle is set.  If it’s getting too dark, but middle is not yet set, lightly cover with foil.

Step 3

Luckily, this is a great dish to make ahead and freeze.  I would bake it all the way through, and then let it cool before putting into the freezer. Sweet potato pie freezes well up to three months.
