Simple Mandel Bread Recipe

A great Passover treat!

Th mandel bread recipe is kosher for Passover AND requested all year long at our house!  Similar to biscotti, mandel bread is a twice baked crunchy cookie. Made in one bowl with simple ingredients, it’s sure to become your go to Passover treat.

Eggs Sugar Cake Meal Potato Starch Chocolate Chips Cinnamon Sugar

Ingredients

Using a hand mixer, beat together the eggs and sugar. When well mixed, add the oil and beat well.

Step 1

Sift in your dry ingredients and then mix well. Stir in the chocolate chips and then refrigerate.

Step 2

Divide the batter in half. With the first half, shape it into a log that's flat on top and place it on the prepared baking sheet.

Step 3

Bake until lightly browned. Then remove from oven and slice the logs into cookies about 1" wide. Lay them flat on their sides and sprinkle with cinnamon-sugar mixture.

Step 4

Return the cookies to the oven and let cook until golden brown. Remove from oven and let them cool on the baking pan.

Step 5

This recipe is completely kosher! Using potato starch and matzoh cake meal substitute for the flour makes it Kosher for Passover.
