Lemon Zest Shortbread Cookie Recipe

Butter Sugar Flour Lemons Egg


Cream the butter and sugar, lemon juice and lemon zest together until light and fluffy. Add in the flour and mix until well combined.

Step 1

Split the dough in half and roll into logs. Then wrap each in plastic and refrigerate.

Step 2

Remove the logs and brush on an egg wash. Evenly sprinkle with powdered sugar and then cut into small disks.

Step 3

Place the small disks evenly on a baking sheet. Put the sheet in the oven and bake until light brown.

Step 4

These freeze great at three different stages, as cookie dough logs, once sliced, and once they are baked.  Just be sure to wrap them up well before freezing.
