Simple Greek Pasta Salad 

This is one of those dishes to keep in the fridge when there are guests in town.  Someone is always hungry, and a fresh take on pasta salad will make just about everyone happy.  It's a great snack and you can make it vegan, gluten free, and everyone special diets are accommodated easily!

Garlic Fresh Herbs Olive Oil Red Wine Vinegar Pasta Chickpeas Feta Cheese Red Onion Beets Cucumbers

Ingredients

Add all of the salad dressing ingredients to a large jar or container and shake heavily to combine. Then set aside.

Step 1

Add the cooked pasta, veggies, and cheese to a large bowl. Pour over the dressing and mix well.

Step 2

Store in the fridge and mix occasionally to develop the flavors. Then serve and enjoy!

Step 3

If you don't want to use fresh herbs, you can easily use the frozen herbs and just shake up the cubes with the dressing.  the herbs you choose will dictate the underlying flavors of the pasta salad so use what you like!
