Coffee Chocolate Chunk Cookies

Easy to make slice and bake coffee chocolate chunk cookies will satisfy all sorts of cravings!

Unsalted Butter Flour Sugar Brown Sugar Vanilla Instant Coffee Grounds Kosher Salt Chocolate Chunks Eggs


In a large bowl, cream the butter, sugars, vanilla and coffee together until fluffy. Then mix in the flour and chocolate.

Step 1

Divide the dough in half and lay a piece of plastic wrap on the counter and place the dough on the plastic wrap and use your hands to form into a log.

Step 2

Use the plastic wrap to tighten the log and wrap well. Repeat with the other half and then place in the fridge.

Step 3

Once set, unwrap the log. Whisk together an egg and use and brush on the egg wash on the outside of the log, then coat in sugar.

Step 4

Cut the log in small, equal disks and evenly spread out on a baking sheet. Then bake the cookies until golden brown.

Step 5

These can be frozen at any point, in a log, once sliced or once baked.  the dough can stay in the fridge up to 5 days before baking.
