Simple Coffee Cake Recipe

A tender coffee cake with a ribbon of strawberry jam in the middle that goes perfectly with a hot cup of tea. This is a great dessert for brunch, tea time or even after dinner.

Flour | White Sugar Baking Soda Baking Powder Butter | Eggs Greek Yogurt | Vanilla Strawberry Jam Brown Sugar | Cinnamon Rolled Oats


In a mixing bowl of stand mixer or in a large mixing bowl cream together the butter and sugar, then add the remaining ingredients (except the strawberry jam) to the bowl and mix until combined.

Step 1

Spread half of the batter mixture in the baking pan.  You may need to use your hands to spread the batter, it's thick! Spread jam onto batter in the pan in an even layer.

Step 2

Cover with remaining half of batter, doing your best to spread evenly over the top.

Step 3

Make the streusel, by combining all the ingredients in a small bowl and mixing until well combined. Sprinkle on top of the cake and bake until golden.

Step 4

This is a super thick batter.  You may need to use your fingers to spread the batter evenly.  I like to get my hand damp and then work the batter into the corners.
