Butter Sugar Lemon Eggs Baking Soda Vanilla Flour MIlk Blueberries


In a stand mixer or hand mixer, cream butter, sugar and lemon zest together until light and fluffy.

Step 1

Mix in the vanilla, eggs, and lemon juice. Alternate between adding the milk and dry ingredients.

Step 2

Use a spatula to fold in the blueberries into the batter

Step 3

Evenly distribute the batter between 12 muffin tins and then bake until golden.
