Simple Asian Crunch Salad

A super simple Asian Cabbage Salad with a crunchy topping and quick homemade salad dressing is perfect to throw together for lunch, an easy dinner or when you get invited to friends and are asked to bring a dish.  Throw it together in about 10 minutes and you’ll win the salad game every time!

Coleslaw Mix Baby Spinach Ramen Noodles Sliced Almonds Sesame Seeds Vegetable Oil Red Wine Vinegar Sesame Oil Soy Sauce Sugar

Ingredients

Combine ramen noodles, almonds and seeds in a small bowl, toss with oil. Spread this topping mix on a cookie sheet and bake at 350 degrees fahrenheit for 5-10 minutes until lightly browned.

Step 1

Add all dressing ingredients to a small jar and shake vigorously until well combined. Make sure the sugar blends well and doesn’t stick to the bottom of the jar.

Step 2

In a bowl, toss the coleslaw and spinach together. Add the dressing and toss again to coat. Add the crunchy topping and toss again.

Step 3

You can leave out the spinach and add in any of the following vegetables as a substitution or as an addition to bulk up the salad: sliced scallions, sliced pea pods, shredded carrots or edamame.
